Flavours of the Highlands – Cookery Demo and Tastings with Theo and Simon

A live cookery demonstration by chefs Theo and Simon celebrating Highland venison, with tastings and a venison pie to take away.

Part of the Dornoch Autumn Highland Festival, this 90-minute in-person demonstration features Theo, Head Chef at Links House at Royal Dornoch, and Simon, Professional Cookery & Hospitality Lecturer at UHI. They will prepare a slow-braised Highland venison pie with a twist, using traditional hot water crust pastry inspired by the classic pork pie. Along the way they share techniques including quick pickled seasonal vegetables and a burnt apple ketchup, plus tips on working with locally sourced game. Attendees can ask questions and each receives an individual venison pie to enjoy during the event or take home.
