Andrew Sharp leads a six-day introduction to whole-animal butchery, cut identification and meat processing across several species.
Practical sessions combine knife work and demonstrations with discussion of traditional and modern butchery, cut use and added-value products. A farm visit links livestock production, animal welfare and meat quality. The course is aimed at existing butchers, chefs, smallholders and serious home cooks.
