About
Andrew Sharp teaches two days of beef butchery, from carcass breakdown and cut naming to knife practice and the uses of different cuts.
The practical course combines demonstrations, discussion and repeated knife work, exploring traditional and modern approaches to British beef and ways to make use of the whole animal. Ingredients, equipment, refreshments and a seasonal buffet lunch are provided.
