Andrew Sharp leads a practical day breaking down a side of pork and explaining the uses of its different cuts.
Participants develop knife and butchery skills while following pork from farm to table, from roasting joints to sausage-making uses. The course covers cut identification, preparation and whole-animal use; ingredients, equipment, recipes and a seasonal buffet lunch are provided.
