Sally-Ann Hunt introduces home-scale curing and smoking, with practical work on preserving foods and cooking with wood and hot coals.
The day combines demonstrations with preparation of smoked and cured products. Participants learn how preservation methods developed and practise techniques adapted for a home kitchen and garden; ingredients, equipment, refreshments and a seasonal buffet lunch are provided.
