About
Emmanuel Hadjiandreou teaches Italian breads and pizzas, with practical work on high-hydration dough, fermentation, ciabatta, focaccia and sweet and savoury pizza.
Participants learn how hydration, proving and shaping affect crumb and crust, then practise handling wetter doughs. Participants bake ciabatta, focaccia and pizza, practising dough handling for each style. Ingredients, equipment, refreshments and a seasonal buffet lunch are provided.
