About
Emmanuel Hadjiandreou introduces sourdough in a one-day class covering wild yeast, long fermentation and the dough skills used for naturally leavened bread.
Participants practise working with a simple flour-and-water starter and learn how fermentation contributes to sourdough flavour, texture and keeping quality. The course is aimed at beginners and aspiring artisan bakers; a seasonal buffet lunch, ingredients and equipment are provided.
