About
Paul Raddan combines naturally leavened sourdough with enriched sweet doughs, giving participants practice in mixing, fermentation, shaping, filling and baking.
The day spans both sweet and savoury artisan baking and covers how different doughs are handled through fermentation and baking. Participants make a selection to take home; a seasonal buffet lunch, ingredients, equipment and refreshments are provided.
